Michelin star for the gourmet restaurant “Hilmar”
The new gourmet restaurant “Hilmar” at Schlosshotel Münchhausen only opened its doors to gourmets in December 2023 - now head chef Stephan Krogmann and the entire team at the Schlosshotel are delighted to have received their first star from the Michelin Guide. Top chef Krogmann invites his guests “to a culinary journey in an elegant ambience that presents classic French cuisine in a modern and cosmopolitan light.”
This was well received - the critics of the Michelin Guide were impressed by the overall concept of Hilmar: “Dining with a real castle feeling! Could there be a more stylish setting than the wonderful walls of the 'Schlosshotel Münchhausen', a stately home dating back to 1570? Under a new name and new kitchen management, you can enjoy modern dishes inspired by French classics. Stephan Krogmann, previously head chef at the “Gutshaus Stolpe”, presents excellent products in his 5-course menu, which are pleasantly reduced and very precisely processed, for example, to 'monkfish from the Breton coast roasted on the bone, aniseed aromas, pine nuts & small mussel ragout with sea herbs'. The various snacks beforehand are also delicious. There is also an optional cheese trolley. The whole thing is rounded off by friendly, experienced service and an elegant ambience that combines historical flair (stucco ceilings, parquet flooring, paintings) with freshness and lightness.” (Michelin Guide 2024) Congratulations!
